Kiss the Cook

Mike and I have kind of fallen off the cooking bandwagon since the beginning of the end of the school year (did you catch that, re-read if it was confusing). Things just get crazy and our schedules were all crazy that we were doing dinner on our own 5 nights a week. Well summer is here and we decided to hop back on board. Last night we paged through our cookbooks and found one from this handy-dandy resource:

We landed on Barbecue Chicken Legs. Meal time was planned for 6pm which meant preparation was to happen around 10am. Mike was scheduled to mow lawns all day but he got up early and ran to the store to stock up on necessary ingredients for me. This was unexpected and I was very touched when I woke up to see I had everything I needed! The recipe was extremely simple to make and we decided to make corn and baked potatoes as sides.

At the end of the meal there was nothing left on our plates but kernel-less cobs, tater skins, and chicken bones! The dinner was fantastic! The chicken was so tender it literally fell off the bone. Mid-meal I suggested to Mike that we use the leftovers for bbq chicken sandwiches and his eyes grew 3 times their size. It's quite possible he'll have a sandwich for breakfast, haha! Success... can't wait to see what else we'll come up with!
