Easter 2010
Our Easter this year was pretty low key. We knew we'd be here, just the two of us, in Des Moines so we decided to invite some friends over to assist in eating the enormous amount of food you have to make on Easter. We weren't quite sure what the turn out would be (I mean, we think we're fun but it's a bit presumptuous to think other people want to hang out with us... on a holiday... or ever), however we were tickled when our friend Brian decided to brave the evening with us. When Brian accepted he asked what he could bring... we responded, "bring a bottle of wine,"... he showed up with 3... we like Brian.
This was the kitchen table I grew up with! This table has seen many delectable dinners let me tell you!
Mike went to an out of town soccer tournament all day Saturday so I was in charge of coming up with the menu and doing the shopping. Here's what I came up with:
Appetizers:
Artichoke Dip with Tastefully Simple Mediterranean Focaccia Bread (which was a gift from one of my students that had been on our shelf forever!)
Cheese and Crackers
Main Course:
Ham
Mashed Potatoes
Green Beans
Crescent Rolls
Dessert:
Jello No Bake Oreo Cake (emphasis on the no bake)
Not bad huh?!
When Mike returned home from his tournament I proudly showed off the 7.38 lb ham I bought to which he said, "do we know how to cook a ham?" Truth be told... we were swine roasting virgins.
If I do say so myself... we did a darn good job.

Our first Easter feast was a success. It's a good thing too because we're going to be eating this Easter feast for weeks! Mike is a genius and decided to take our leftovers to poker tonight... he told the guys not to eat before they played... because that's how much food we had leftover. Oh well, now we're good cooks and very generous... we rock!!
