Happy late Valentine's Day everyone!

I do believe Mike and I started a tradition two years ago without realizing it because when we thought back to our past Valentine's Day events we realized we've done the same thing: stayed in and made dinner together. The first year we were married we made Italian gnocchi's from scratch (thank you very much), neither of us can even remember what we did last year and, if you can believe it, I didn't blog about our Valentine's day last year (though I did manage to find time to blog about this, really?) but we do remember making something, and this year we decided to make this lovely dish...
















Readers, do not be fooled by appearances, this isn't just any chicken breast over spaghetti sauce and noodles, this bad boy is stuffed. Stuffed Chicken Parmesan to be exact. I found the recipe on Monday night and knew it'd be a hit because Chicken Parmesan is one of Mike's favorite dishes. I have to say, it tasted delicious. We enjoyed our meal together and spent the rest of the evening gazing into one anothers eyes and talking about our future watching Big Bang Theory. It's true my friends and you wanna know something, it was a wonderful evening.

I wasn't sure I wanted to write a post about Will's arrival partly because I believe this is a very intimate event meant for an exclusive crowd (in our case this would include just Mike and I) and partly because I wasn't sure I'd really want to relive the event. Welcome to Iowa!

Come one, come all… to a place called Iowa (it’s in the middle, not to be confused with Idaho ). Welcome blog-trotters , I’m happy you are here! My Iowa journey began 8 years ago at Iowa State University and I’m now going on year 4 of my true residency as an Iowan. My husband and I live in the center of the downtown area of Des Moines. We make a living by teaching the youth of America (or future Iowans themselves). We both come from neighboring states (I’m from Minnesota and he’s from Illinois ) but we are thoroughly enjoying our lives here in the capital city. I have found my favorite things about Iowa categorize themselves into seasons, which is how I will present this lovely state to you today. Baby P has Arrived

It's true... the wait is finally over... Baby P has officially joined the world. William Michael Pentek  finally  joined the world on June 18th! Truth be told, I was  completely shocked  it was a boy. I secretly was convinced it was a girl the entire time I was pregnant, honest. I didn't say anything ever because I truly did not care either way, it was just a feeling I had. And I was wrong! Mike was actually the one to announce the sex once he came out and I was in shock!! Here's Will the day after he was born. Here's Will as we packed up to leave the hospital. This picture cracks me up because the look on his face looks so  skeptical as if he's thinking, "are they really going to send me home with these  two?!" haha, can't say I blame him. :) Will is now 12 days old and we've been home for a week and 2 days. He (and we) even survived his first road trip to Minnesota this past weekend. We are adjusting very well...
