My Secret Culinary Masterpieces

I know this sounds weird, but Mike is a picky eater so, for dinners, I stick with things I know he'll like too. However, Mike is out of town for a bachelor party this weekend so I made some delectable treats for myself while he's away. First on the list, basil pesto. I already mentioned this from my trip to the Farmer's Market last weekend but I made it tonight and enjoyed an amazing bowl of pesto penne. I use the basic pesto recipe from this book and received a tip from Rachael Ray to add some of the pasta water to the pesto to thin it out a bit and to get more bang for your buck. It was delish.

Second on my list was a summer time staple in my house growing up... pasta salad! There are two things I love have easy access to in the summer, fresh fruit and pasta salad. Both were dishes my mom made when I was little and I do my best to carry on the tradition. The fresh fruit is a summertime given, Mike has no idea what he's missing (I seriously think he's on the verge of trying the fruit I eat for the sole reason of putting a stop to my over the top "yummy" sounds I make while eating fruit- remember the Friends episode where Rachel screws up the trifle and Joey teaches everyone "acting" techniques to help them pretend they like the food?... my act resembles that). The pasta salad is just a great go to addition to meals or a quick lunch. It's nothing fancy, just rainbow rotini pasta mixed with any fresh vegetables you enjoy all tossed with Italian dressing. I add black olives because I love them and my mom used to add onions which I omit so it's a pretty flexible dish.

*Fun fact about Zesty Italian dressing: I was comparing ingredients between the light dressing and the fat free dressing and found the 3rd ingredient in the fat free dressing was high fructose corn syrup. This was alarming to me, but maybe this is something everyone knows. I went for the light dressing instead.
