Keeping Busy

Over the past two months, I've spent the bulk of my evenings alone due to soccer. Mike spent the past four years as the freshmen boys soccer coach for Roosevelt High School here in Des Moines but this year he moved into the assistant varsity coaching position. While Mike's enjoyed the season, the time commitment was a lot more than it's been in the past; hence, me spending my evenings alone. I really don't mind, I've been keeping myself busy.

I've always found making dinner for just myself to be a challenge. I have a hard time justifying using dishes because I don't want to clean them so sometimes I just opt to have cereal and you know how much I love cereal. However, I've had a go to dish since I finished college and, I must say, I've done a nice job of perfecting it since then.















It started as just sauteed oil and garlic but I've grown a little more daring in the kitchen and began adding other ingredients. I start the water for the pasta and at the same time begin to heat halved cherry tomatoes in olive oil with salt and pepper. When they start to sizzle I add garlic, dried basil, dried parsley, and red pepper flakes and toss in the pan with the tomatoes. I let the spices sink into the tomatoes for a few minutes and then remove the pan from the heat. At this point, the pasta is about half way done. In a bowl, I whisk half a lemons worth of juice and zest with olive oil, salt, and pepper. Next I add the tomatoes, spices, and oil into the lemon mixture and stir in the pasta when its ready. Top with Parmesan cheese (and fresh basil if you have it) and enjoy! It's super simple, delicious, and great for all seasons.

Mike and I both watched the first season a while back and weren't terribly impressed but I had heard so many great things about it that I had to continue giving it a shot. I'm a little over half way through the third season and I must say, I'm thoroughly entertained. It's weird though, I don't particularly like any of the characters because, if you ask me, they're all pretty messed up. I'll tell you something, being a wife in this setting would not have been my cup of tea, geesh. And the amount of drinking these men, and women, do is just crazy to me. It's an interesting work ethic, that's for sure.
So, between the Mad Men and the pasta dishes, I'm happy to say I survived another soccer season. The Rough Riders had a good season but lost in a sub-state game against one of their toughest rivals. It was a disappointing game but Mike was ready to close the season. Let's take a look at the man in action shall we...
